William's Cincinnati Chili Recipes
William's Famous Cincnnati Style Chili
Ingredients:
- 2 lbs of ground lean ground beef
- 1 quart (32 oz.) water
- 2 large or 4 small onions
- 2 large chopped garlic buds
- 1 can (6 oz.) tomato paste
- 4 Tb chili powder
- 1 1/2 Tb allspice
- 2 tsp black pepper
- 1 tsp cumin seed or powder
- 1 tsp cinnamon
- 1 tsp red pepper
- 1 tsp Worcestershire sauce
- 3 large bay leaves
Directions:
Crumble the ground beef into the water. Add the remaining
ingredients. Stir. Simmer 3 or more hours. It's best to
prepare this a day in advance and store in the refrigerator.
Serve hot with chopped onion, oyster crackers, and/or
finely grated cheddar cheese. Makes 8 servings.
William's Cincinnati Style Four Way Chili
Ingredients:
- Cincinnati style chili from the above recipe
- 2 lbs spaghetti
- 1 large or 2 small chopped onions
- 1 lb finely grated cheddar cheese
- 8 oz oyster crackers
Directions:
Cook spaghetti as instructed on the package. Drain and
place on a plate or shallow bowl. Top first with chili so
as to cover most of the spaghetti. If desired, top with a
layer of chopped onions. Finally, add "fluffed" grated
cheddar cheese. Serves 8.
William's Cincinnati Style Cheese Coney's
Ingredients:
- Cincinnati style chili from the above recipe
- 1 package of small hot dogs
- 1 package of hot dog buns
- 1 large or 2 small chopped onions
- 8 oz finely grated cheddar cheese
- Mustard
Directions:
Lightly steam the hot dog buns. Put mustard in the buns and
then add a hot dog. Cover the hot dog with chili. Top the
chili with onions and a nice mound of "fluffed" grated
cheddar cheese.
